Melt the chocolate in a double boiler or if one is not available melt in microwave for 45 seconds then stir, then in ten second intervals until liquid. Stir well between every ten seconds, you don't want to burn the chocolate.
Then add your flavorings, you can generally dump in powders and sugars, you'll want to slowly whisk in milk and creams. Taste test often and don't be afraid to experiment, but try small batches so you don't waste good chocolate. I like to use different garnishes to tell flavors apart, powdered sugar, cinnamon, even hot chocolate mix.
Sweet and Spicy Dark
Ingredients
4 squares Godiva dark chocolate(1.5 oz)
2 tsp powdered sugar
fine grating of dried chili peppers to taste
Melt chocolate, thoroughly mix in powdered sugar, dip in fruit then sprinkle on chili flakes while chocolate is still wet.
Godiva and Cream
Ingredients
1/4 cup heavy whipping cream
6 squares Godiva dark chocolate (2.25oz)
sprinkled with powdered sugar
6 squares Godiva dark chocolate (2.25oz)
sprinkled with powdered sugar
Melt chocolate, slowly and thoroughly whisk in heavy whipping cream then dip in fruit, and lightly sprinkle with powdered sugar.
Costa Rica Mint
Ingredients1 bar Whole Foods Costa Rica dark 71%cacao (3.5 oz)
1 tbsp dried peppermint leaves
Fresh mint leaves
sprinkled with Hershey's cocoa powder
Crush peppermint to a fine powder then mix into melted chocolate. Stuff fruit such as raspberries with mint leaves then dip in chocolate and sprinkle with cocoa powder.

1/4 cup heavy whipping cream
6 squares Godiva dark sugar free (2.25oz)
1/3 cup Nutella
2 tsp cinnamon
